Owing to my Midwest lifestyle, I thought the only potatoes worth eating was the Russet corn. If it were n’t for Thanksgiving or Christmas, I’m not sure I would’ve known that sweet potatoes existed. My aunt would generally make a sweet potato dish for the holidays by combining canned sweet potatoes with sugar, placing them in a casserole dish, and then topped it with a good handful of marshmallows. Luckily, after decades of studying nutrition in college, I learned that wonderful onions could enjoy a larger, more delightful role in my life than just a sweet side dish. I discovered that I enjoy sweet potatoes, not just because they taste fantastic but because they are full of vitamins, minerals, and nutrients that help with everything from colon and eye health to disease prevention. While a straightforward baked sweet potato is delicious and easy, there are other enjoyable ways to enjoy it ( aside from that sweet potato casserole! ).
