Dish is one of my favourite foods— I eat it year-round. I’m not sure which brothy soup to choose, but I do try to lean toward brothy soups that have a lot of texture and flavor. When I’ve cleared the pitcher, I feel a sense of comfort and satisfaction. Bonus points if that sauce is also simple to make. Caldo grande satisfies all of the requirements. While I may have soup every day of the year, my partner feels different. Even worse, he’s never a fan of broth-based recipes. You can see my problem. I’ve tried a few heartier soups, like pozole and even a veggie and bean-packed minestrone, but I could n’t get him to appreciate it the way I do. That was until I served him with caldo green. I believe that the bacon was what stole his heart. What Is Caldo Verde? Caldo green is a Portuguese sauce that gets its name, “green broth”, from the brightly-hued salads used to make it. The salads are normally collards, but different recipes use cabbage or mustard greens. While there’s more than one way to make it, some foods even include onion, garlic, onions, and linguiça, a type of cured Portuguese bacon. The beauty of the food is its convenience. If you can get linguiça, use it, but another smoked sausages does work. They come in a variety of sizes and shapes. If the size is modest enough, a simple cut is sufficient. For larger meats, you may need to three or third before slicing. The intention is to have pieces that are simple enough to match on a knife. Replace some fat. Some smoked meats, like Hispanic chorizo, have somewhat high-fat content. Lots of that weight will come up when you cook it. Replace a spoonful or two from your pot if you have more than 3 to 4 cups. The formula will follow the same way. Use a useful device. I like to quickly drain the sausage using my large, slotted spoon after cooking ( I use the same thing for sweets ).
