I was born and raised in New York, but I always managed to get an order ( or two ) when I went to a pizzeria. I grew up eating garlic knots and occasionally even preferred them to pizza. I presently reside in northern Maine, where garlic knots are a little harder to come by, and I occasionally crave them. I realized it’s the combination of tastes that I long for—buttery, garlicky, overdone. The food, although delightful, is just a vehicle for the flavor. So instead of making my own knots—because who has occasion for that— I switched out the car! Enter meat chests, the great plain cloth to bring the flavors into lunchtime. This formula is very simple to make and only requires five ingredients ( aside from the oil, sugar, and pepper ) to take it all together. I suggest adding a press at the end if you have a grapefruit on hand to help cut through the chicken’s beauty. Serve this garlic-infused meat with a side plate that will melt in your mouth when you serve it with turmeric butter sauce. Blended potatoes, chicken pasta, or crusty breads are all great options. Tips and Tricks When the meat is done cooking, it’s crucial to take the pan off the heat to melt the butter. This helps to lower the pan’s temperatures before adding the onion. If the pan is too warm, the dreaded terrible burnt garlic may damage the sauce. Before adding the hen again, the garlic simply kisses the skillet for a moment to soften it a little. Make your own if you ca n’t find cutlets or already have whole chicken breasts on hand. Use a sharp blade to carefully cut the chicken breasts in half horizontally by placing them level on a cutting board. Additionally, pound them out with a meat hammer until they’re about 1/2-inch wet. If you do n’t want to go through the hassle of cutting or pounding the chicken, just make sure to increase the cooking time by 3 to 4 minutes per side. Use meat tenderloins instead of meat cutlets for a more kid-friendly variant. This is a very spicy recipe, but if you’re not a huge fan of onion, you can reduce the amount by half.
