While I do n’t have kids, I have plenty of friends who do, and I know they are all managing the return to school right now, from earlier wake-up times and busier mornings to after-school activities. Although the idea of everyone having dinner together is nice, your family may be eating in transitions during these times. Even my husband and I do n’t always eat dinner together, such as when he goes out for a long marathon-training run after work and I’m ready to eat earlier. But when life gets hectic, make one of these soups, they’re ideal for eating up or serving in servings as needed. And because they all have 15 grams of protein or more per offering, you can be certain that your home will be well nourished and energized for everything from research to soccer training. You’ve got this! Your Weekly Plan Sunday: French Onion Dip Chicken &, Rice CasseroleMonday: Cheesy Black Bean &, Quinoa Skillet CasseroleTuesday: Anti-Inflammatory Lemony Salmon &, Orzo CasseroleWednesday: Spinach &, Artichoke Casserole with Chicken and Cauliflower RiceThursday: Zucchini Enchiladas Friday: Cheesy Meatball Casserole Sunday: French Onion Dip Chicken &, Rice Casserole Greg Dupree If you’ve ever watched Only Murders in the Building, you know “dips for dinner” is a thing. And while I could certainly make dinner with only dips, a dish made with a dip will undoubtedly be more exciting. This single starts with a base made of cream cheese and yogurt, next adds rice, chicken, and nicely caramelized onions. It tastes just as good with destroyed potatoes chips as chips and dip. This simple vegetarian dish casserole is loaded with plenty of protein, thanks to Rachel Marek’s creative use of black beans and black beans. Plus, it’s full of maize, which has thousands of fibers, and vegetables, which are rich in lycopene, an antioxidant that helps prevent heart disease. Before being melted on top, the lasagna quickly comes together on the stovetop. Tuesday: Lemony Salmon &, Orzo Casserole Stacy Allen When I think of soups, fish does n’t often come to mind, which is why this beautiful, fruity salmon and orzo casserole is a wonderful addition to this week’s meal plan. Second, lemon slices, plum tomatoes, onions and garlic cook until softened and sweet, and then the orzo and some soup go into the cooking dish. While cooking, the orzo absorbs the soup and a lot of taste. The artichokes and omega-3-rich salmon get in previous so there’s little danger of overcooking them. Serve it with some pieces of whole-wheat loaf. Wednesday: Spinach &, Artichoke Casserole with Chicken and Cauliflower Rice Photographer: Jen Causey, Prop Stylist: Julia Bayless, Food Stylist: Chelsea Zimmer Circling again to falls for dinner, spinach and artichoke fall is one of my friends. The key ingredients in this dish are cauliflower grain, chicken, and artichokes, and cream cheese. Adds another layer of fragrance to the mix with a little new parsley havarti cheese and fresh dill on top. The dish is very filling without feeling heavy because it contains plenty of proteins from the chicken and plenty of fiber from the vegetables. Serve it with the remainder of Tuesday’s loaf. Zucchini Enchiladas This unusual food is a fun spin on a regular food on Thursday. Instead of tacos, you’ll move up the filling—chicken, enchilada sauce, shredded cheddar, garlic and poblanos—inside lengthy, thin slices of cucumber. The resulting tacos are just as sweet as those made with tacos, but because they’re made with zucchini, they’re even lower in calories than traditional tacos. Your home will be given a filling meal that will stay them satisfied, no matter where they’re headed second thanks to the abundance of protein and more vegetables. Perhaps a football match or a dancing lesson? Friday: Cheesy Meatball Casserole Jen Causey The close of the week certainly warrants some comfort food. This overdone pasta dish is served with herby spaghetti. Starting with whole-wheat spaghetti ensures that this meal has plenty of nutrients, including fiber, which is great for colon health. You’ll partially cooks the pasta, toss it with sauce, and then insert the leftover meatballs into the casserole to ensure that all cooks at once. While the meatballs cook through, the pasta will accomplish cooking in the pan. I wish you all a wonderful year and hope this dinner menu appeals to you. If you try a menu, remember to add a critique.
